Instructions:
1. Dice the onion.
2. Heat your oil in a large pot and sauté the onion cubes over medium heat.
3. Add vegetable broth, coconut milk and frozen vegetables; bring everything to a boil.
4. Season with ginger, garlic, curry powder, paste and paprika.
5. Simmer for about 8 minutes. Season to taste with salt, pepper, and chili. Garnish with cilantro and enjoy this amazing soup!
