Food Recipe #2: Thai-Soup

A bowl of soup is garnished with herbs next to fresh vegetables and a citrus-flavored beverage.

An Asian flavor adventure!

Ingredients:

  • 1 Onion
  • 2 tbsp oil
  • 800 ml vegetable broth
  • 1 can coconut milk
  • 750 g Asian vegetables frozen
  • Grated ginger
  • 1 tbsp red curry paste
  • 2 garlic gloves pressed
  • Curry powder
  • Paprika powder
  • Chili flakes

Instructions:

1. Dice the onion.

2. Heat your oil in a large pot and sauté the onion cubes over medium heat.

3. Add vegetable broth, coconut milk and frozen vegetables; bring everything to a boil.

4. Season with ginger, garlic, curry powder, paste and paprika.

5. Simmer for about 8 minutes. Season to taste with salt, pepper, and chili. Garnish with cilantro and enjoy this amazing soup!
